How to Make Pizza with Three Ingredients

In our efforts to eliminate food waste in our kitchen, we use Abeego wraps as a way to keep our fridge in rotation, ensuring we use up every last bite and not add to our compost bin. One of our favourite ways to use up what's left in the fridge is to make pizza! 

Making homemade pizza dough is really easy and fun. The toppings can be as simple or elaborate as you’d like and range from broccoli to leftover ham. It’s a staple in our life because it lets us use the ends of vegetables and leftovers that might otherwise go to waste.  


When making pizza, I use three simple ingredients (and usually one cheese) to make an amazing pie.

Some of my favourites are:

  • Artichokes, arugula, mushrooms, with blue cheese
  • Fire-roasted peppers, onions, herbed garlic and oil base, with asiago
  • Mushrooms, sundried tomatoes, spinach, with buffalo mozzarella

Pizza can be a simple and nutritious meal that varies every time you make it, based on what’s in your fridge or your pantry. Try it tonight with our simple homemade pizza dough recipe below. Also, when you sit down to enjoy your meal, focus on eating mindfully, chewing your food fully, and enjoying the time spent with friends and family.


Homemade Pizza Dough

2 ¼ tsp yeast
⅔ c. very warm water (not boiling just warm)
2 TBSP honey or agave
1 ½  c. all-purpose flour
½ tsp salt
2 tsp extra virgin olive oil


Method:

  • Add warm water to a large bowl
  • Stir in yeast and honey.
  • Swish with hands, or wooden spoon, making sure the yeast and honey has dissolved in the water
  • Add flour, salt, and ½ a tsp of oil. Mix well.
  • Coat the top of the dough ball with olive oil, to keep your dough from drying out as it rests.
  • Cover your bowl with a large Abeego and let it sit for 45 minutes. (I find this is just long enough to get all of your veggies chopped and pans out)
  • Roll out dough using some flour.  Pre-bake your dough* (before topping) in the oven at 350 degrees for 10 minutes or until the top browns a bit.
  • Remove from oven add your pizza toppings and bake in the oven for another 10-15 minutes or until crust is golden brown.
  • Enjoy!

*Pre-baking your dough will ensure that dough is cooked all the way through but veggies are not overcooked.
